Should be pretty easy. Just set either an LFO (env) or Filter ENV to OSC pitch in the matrix. Or use the pitch wheel

That ain't no 'doppler' sounds with just a simple pitch modulation:-)

Use an lfo/env to modulate the volume, you could also try it on the panning of the sound too. Pitch doesn't necessarily have to be automated to achieve a Doppler effect.
Also try a triangle lfo on the filter cutoff, to increase HF content as the sound gets closer, then have it roll them off as the sound moves away.

I guess it depends on what you want to do, but as far as I remember the doppler effect has to do with the pitch changing depending on direction & speed.
