Can the USB signal be split into two channels panned left and right in Logic? Or is this only possible with the audio outs?

Send each of VC's audio output tracks to separate busses instead of the main mix (say, bus 1, bus 2 and bus 3 for 3 Virus outputs). Then create pairs of aux channels, and set each pair's input to be one of the busses you used (yes, each bus should be used by 2 aux channels as an input). Now for each pair pan one of them hard left and the other hard right.

Thanks but should you also set the bus to "no output?"
IIRC, if you don't create a bus channel object for that bus it will not be added to the main mix anyway, but if I'm wrong I think it's a good idea to stop the VC signal from being doubled.
here's a trick for you: click and hold the channel configuration icon of an audio channel in logic's mixer (it looks like an infinity symbol when the channel is a stereo channel). a context menu will open which lets you choose which side the channel receives.
