I know that using a USB hub isn't really best practice with the Virus (got a TI2 Polar). Still – has anyone had good experiences using a USB-C hub (ideally one that also supports Thunderbolt) with one of the recent MacBook Pros? Would love to reduce the number of cables to attach to my laptop … Thanks!

Generally the issue has to do with the fact that the virus is running a pretty slow USB speed, and when it works on a hub, the slowest device on the hub brings all the other devices to that speed. So basically they suggest you put the Virus on it's own USB port. Figuring out what your USB ports are and which one to use can be tricky at best, and in a laptop with USB-C it's probably the only USB port.
Adding another hub on top of the original internal hub can cause latency, but in my experience putting a hub on that isn't sharing any other devices and supports USB High-Speed has worked fine for me. However I also went out of my way to find the fastest hub I could.
If you connect the Virus to a USB Hub, make sure the Hub supports MTT (https://en.wikipedia.org/wiki/USB_hub#Speed)

Yep, Apple's official connector's worked for me. As for the hub, I decided to get one from Satechi (Type-C Multi-Port Adapter 4K with Ethernet V2) – will report back once I've tested it.
OK, got the Satechi Type-C Multi-Port Adapter 4K with Ethernet V2 – doesn't work with my TI2 Polar (the Virus doesn't get recognised, and the plug-in doesn't start up). A direct connection with one of Apple's official USB-A-to-USB-C adapters just works.
I have a Dootoper Typ C Hub here which works fine.
