ROM: B-126, "YamahFB1MS" - is just a simple bass sound on my model. You don't actually state the name of the patch (unless it's "start"?) - so I will assume it's the same. Can't say I experience anything remotely similar to you.
I highly doubt its the actual processor....that isn't a component that would result a partial fail like that.
It seems more related to power in my opinion.

Can you give me more information specifically about what settings you are looking for and what scenarios you would like capture data for?
I am about to successfully capture packets from USB (see screenshot).
I don't yet have your editor, so I won't be able to test functionality there - but can test the TI plugin communication.
Getting packet data is trivial. Interpreting it is going to be the challenge, but I assume you have made some headway there.
Also, this is on Windows 11. I also have an M1-based MacBook Pro that I could try capture on.

You should be able to capture the packets via WireShark. Been a while since I've done this myself/

Hardware and software limitations aside, Bluetooth is currently incapable of data transmission fast enough for this purpose.

Open Virus Control Center. The procedure is pretty much foolproof from there.

I don't use sonar myself, but can you record sysex and midi cc per midi channel? If so, that should work. If you are trying to automate directly from the plugin, you probably are only going to be able to do it globally.
Try recording in true multi mode (aka legacy mm). Perhaps this is what you are looking for.

Also worth noting that in seq mode, the virus allocates midi channels to every other dsp. If you have a complex sequence that uses all dsp on channel 1, try splitting that into channel 2. The idea is to share the load equally on channel 1 and 2 and utilize both DSPs.
may want to try cleaning the key contacts. The couple times that I've had keys stop working on a Virus were due to dirty contacts.
